Brine Recipe

½ gal water

6 Tbsp kosher salt

1/3 Cup sugar.

Three sprigs of rosemary

3 pieces of Bayleaf

1 lemon, sliced into 4

1 tablespoons of black peppercorn

Put everything in the pot and bring it to a boil. After it’s boiled, turn it down to a small low simmer for about 15 minutes. Once it’s cooled down, Discard all the spices. A whole pack of chicken breast from Costco (thick breast) will take about 4 to 5 hrs. Refrigerated it. Make sure you wash the brine off. Individually wrap it with saran wrap. I prefer to do it twice just so it won’t get freezer burn. Store in freezer Ziplock bag.
